Sake kasu shochu is distilled from the pressed lees left after sake production, carrying residual rice sweetness and a gentle grain character distinct from imo or mugi styles. Drink it straight over ice or with cold water, or use a small measure to marinate fish and pork — the enzymes in the lees tenderise the protein while adding depth.
