A white tamari from Mikawa in Aichi prefecture, brewed almost entirely from wheat with very little soy, giving it a pale gold colour, delicate sweetness, and a subtle umami that will not stain a dish. Ideal for clear consommés, white fish in sauce, chawanmushi, and any preparation where a dark soy would ruin the visual.
