Tatsuriki Junmai sake, vintage 2010

Tatsuriki is a Harima brewery known for brewing with Yamada Nishiki rice grown on specific contract plots; a 2010 vintage junmai will have developed a deeper amber colour and a rich, oxidative complexity. Treat it as you would an aged white wine — serve at cool room temperature with umami-forward dishes: mushroom rice, miso-glazed aubergine, cured fish.
