Ryusei's Kimoto Hattan is made by the labour-intensive kimoto method, using Hattanso rice from Hiroshima to produce a sake with natural lactic depth, texture, and a savoury umami backbone. Serve at room temperature or gently warmed; it holds well against fatty fish, aged cheese, or dishes finished with brown butter.
