Akasu is a red vinegar made from sake lees, aged until it deepens to an amber-red with a mellow, complex acidity and a faint sweetness that standard rice vinegar lacks. It is the traditional vinegar for Edo-style sushi rice, where it gives the shari a subtle pink tint and a more nuanced flavour than white rice vinegar.
