Okumidori is a shade-grown cultivar prized for its high amino acid content and vivid colour; at premium organic grade it produces a sencha or gyokuro-style leaf with pronounced sweetness, minimal astringency, and a clean umami finish. Brew at around 60–70°C to preserve its character, and consider a second short infusion which often yields more depth than the first.
