Thick-shaved premium katsuobushi — dried, smoked, and fermented skipjack tuna — with concentrated inosinic acid that forms the backbone of ichiban dashi. Steep in water just off the boil for three to four minutes, strain immediately, and the stock is ready; also used as a garnish, seasoning, or pressed into furikake.
