Gyokuro okumidori is shaded for three or more weeks before harvest, suppressing photosynthesis and driving up theanine — the amino acid responsible for gyokuro's characteristic sweetness and oceanic depth. Brew at 50–60°C in a small volume of water; even a short steep yields a dense, almost syrupy cup.
