A rice shochu aged thirteen years in cask — Koshu style, amber, with the soft vanilla and dried-fruit character that long ageing brings to distilled rice spirit. Serve neat or lightly chilled as a digestif, or reduce a measure into a sauce base for cured or smoked fish.
