Long-aged hon mirin from Kankyo Shuzo (Aichi, est. 1862): rice fermented six months at low temperature for roughly double the umami of standard mirin — sweet, gentle and deep with a lingering, toasted-shochu finish (14% vol.). Ingredients: rice (60%), alcohol (33%), rice koji (6%), shochu (1%). Lends natural sweetness, body and gloss to sauces, glazes and reductions — brush over fish before grilling or baking, deglaze meats, or use in simmered dishes (nimono), teriyaki, marinades and dashi-based noodle broths. 1.8 L (isshōbin).
