Aging deepens the umami and softens the fat, giving a more concentrated, less watery slice than fresh. Serving suggestions: • Cut each grade separately and plate as a graduated sashimi flight • Form otoro and chutoro into nigiri to let the fat melt on the tongue • Sear akami briefly as tataki and finish with smoked soy
